THE BEST OATMEAL COOKIE EVER!!! You will not believe that there is no oil, flour, eggs or milk in these cookies. I’ve made these so many times and everytime they are gone within a few days - sometimes the same day...but I'm not judging if that happens to you too!
These are super easy to make and come together rather quickly. I made these with 6 ingredients, but they can be made with just 3 ingredients. Add what you like, remove what you don't. Sometimes when I go to make these, I am out of one thing, so I sub it for something else. No worries and they still taste amazing. The main 3 ingredients are: bananas, oats & chocolate chips. Anything else is just adding to the party!
Ingredients
3 ripe bananas (the more brown spots the better) 1 tsp chia seeds A handful of walnuts (chopped) 1 cup of rolled oats 1/3 of chocolate chips 1/2 cup of coconut (unsweetened) Directions - Turn oven to 425F - Mash bananas in bowl - Add chia seeds and set aside so they can absorb and soften - Measure out ingredients - Add all ingredients, except chocolate chips to the bowl - Once all is combined, fold in the chocolate chips - Line a cookie sheet (I use silicone baking sheets but parchment will do) - Scoop out mixture into small balls and flatten - Mixture should make 12 decent sized cookies - Bake for 10 minutes or until they are browned and bananas have cooked through Notes: The best thing with these are that you can add anything you like to them. If one of my ingredients doesn't work for you, no worries! Substitute it out for something else. I sometimes add almond butter to these and they are delicious that way too! These are great for breakfast, lunch & dinner. Snack away!
